Total Time: 4 hours 20 minutes
Servings: 8 slices
Ingredients
For the Oreo Crust:
- 24 Oreo cookies (with filling)
- 5 tablespoons unsalted butter, melted
For the Creamy Peanut Butter Filling:
- 1 cup creamy peanut butter
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/4 cups whipped topping (or homemade whipped cream)
For the Chocolate Ganache Topping:
- 3/4 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- Pinch of sea salt
Optional Garnishes:
- Mini Reese’s cups, halved
- Crushed peanuts
- Chocolate curls or shavings
- Drizzle of melted peanut butter
Instructions
1. Prepare the Oreo Crust
In a food processor, pulse the Oreos into fine crumbs. Mix in melted butter until well combined. Press firmly into the bottom and up the sides of a 9-inch pie dish. Refrigerate while you prepare the filling to help it set.
2. Make the Peanut Butter Filling
In a large bowl, beat together the peanut butter, softened cream cheese, and powdered sugar until smooth. Add the vanilla extract, then fold in the whipped topping gently until no streaks remain. Spread the filling evenly into the prepared crust.
3. Make the Chocolate Ganache
Warm the heavy cream in a microwave-safe bowl or saucepan until steaming but not boiling. Pour it over the chocolate chips and let sit for 1–2 minutes. Stir until smooth and glossy. Add a pinch of salt to balance the sweetness.
4. Assemble the Pie
Pour the ganache over the peanut butter filling and spread evenly with a spatula or spoon. Refrigerate the pie for at least 4 hours, or overnight, until fully set.
5. Garnish and Serve
Top with your choice of chopped peanuts, Reese’s cups, or a peanut butter drizzle. Slice with a sharp, warm knife for clean edges and serve chilled.
Chef Ed’s Tips
- Let the cream cheese sit out for 30 minutes before mixing to ensure a smooth filling.
- Use full-fat ingredients for best texture, or substitute light cream cheese and whipped topping for a lower-calorie version.
- For a stronger peanut flavor, try mixing in a tablespoon of roasted peanut butter powder.
Health Note
While indulgent, this pie offers protein and healthy fats from the peanut butter. Serve in modest slices and pair with fresh fruit for a well-rounded treat.
Having said that, you can eat the entire pie and down it with an ice cold glass of milk and not be ashamed. Enjoy it!!!!
