Chef Ed’s Recipe – Classic Skillet Breakfast with Fried Eggs, Bacon, Avocados, Mushrooms & Tomatoes

Ingredients:

  • 4 large eggs
  • 4 slices thick-cut bacon
  • 1 ripe avocado, sliced
  • 1 cup mushrooms (button or cremini), sliced
  • 1 cup cherry tomatoes, halved (or 1 large tomato, diced)
  • 1 tablespoon butter or olive oil
  • Salt and black pepper (to taste)
  • Optional garnish: fresh parsley or chopped chives

Instructions:

1. Cook the Bacon:

Remove and place on a paper towel-lined plate. Reserve 1–2 teaspoons of bacon grease in the pan for extra flavor.

2. Sauté the Veggies:

Add mushrooms to the skillet with a pinch of salt. Sauté for 4–5 minutes until browned and softened. Add cherry tomatoes and cook another 2 minutes until slightly blistered. Remove and set aside.

 

3. Fry the Eggs:

In the same pan, add butter or oil if needed.
