Chef Ed’s Recipe – Classic Skillet Breakfast with Fried Eggs, Bacon, Avocados, Mushrooms & Tomatoes

Ingredients:
- 4 large eggs
- 4 slices thick-cut bacon
- 1 ripe avocado, sliced
- 1 cup mushrooms (button or cremini), sliced
- 1 cup cherry tomatoes, halved (or 1 large tomato, diced)
- 1 tablespoon butter or olive oil
- Salt and black pepper (to taste)
- Optional garnish: fresh parsley or chopped chives
Instructions:
1. Cook the Bacon:
In a large skillet over medium heat, cook bacon until crispy (about 4–6 minutes), flipping as needed. Remove and place on a paper towel-lined plate. Reserve 1–2 teaspoons of bacon grease in the pan for extra flavor.
2. Sauté the Veggies:
Add mushrooms to the skillet with a pinch of salt. Sauté for 4–5 minutes until browned and softened. Add cherry tomatoes and cook another 2 minutes until slightly blistered. Remove and set aside.
3. Fry the Eggs:
In the same pan, add butter or oil if needed. Crack eggs into the skillet and cook to your desired doneness—sunny side up, over-easy, or medium. Season with salt and pepper. For yolks that stay intact, cover the pan briefly with a lid.
4. Assemble the Plate:
Arrange two eggs, two slices of bacon, sautéed mushrooms and tomatoes, and fresh avocado slices on each plate. Garnish with herbs for a fresh finish.
Chef Ed’s Tips:
- Upgrade it: Add a slice of sourdough or toasted multigrain bread on the side.
- Spice it up: Sprinkle with chili flakes, smoked paprika, or a dash of Tobasco or Chipotle sauce.
- Veggie lovers: Add spinach, bell peppers, roasted garlic or caramelized onions for variety.
