A beloved street food from Honduras, the baleada is a warm, thick flour tortilla folded over a savory spread of refried beans and layered with cheese, crema, and a variety of flavorful fillings. In Chef Ed’s version, we take it to the next level with grilled chicken, steak, and pork like they are sold on the streets of Honduras, creating a protein-packed masterpiece that’s both comforting, delicious and full of love.

Do not limit yourself to just this Recipe, be creative and try it out with shrimp, vegetarian or just with beans, cream, cheese and scrambled eggs and can be had for breakfast, lunch or dinner!

Ingredients

For the Flour Tortillas (or use store-bought thick tortillas):

  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 tablespoons vegetable oil
  • 3/4 cup warm water

For the Fillings:

  • 2 cups refried red beans (or black beans), warm
  • 1 cup Honduran crema or sour cream
  • 1 cup crumbled queso duro, cotija, or feta
  • 1 cup pickled red onions
  • 2 avocados, sliced

For the Meats:

  • Chicken: 1 boneless breast, seasoned with lime juice, cumin, garlic, and paprika
  • Steak: 1/2 lb skirt or flank steak, seasoned with salt, pepper, and oregano
  • Pork: 1/2 lb pork shoulder or loin, marinated in orange juice, garlic, and chili powder

Instructions

1. Make the Tortillas (if homemade)

In a large bowl, combine flour, salt, and baking powder. Add oil and water, mixing until dough forms. Knead for 5 minutes until smooth. Rest dough for 15 minutes, then divide into 4 balls. Roll each out to 1/4-inch thick. Cook on a dry skillet over medium heat for 1–2 minutes per side until lightly golden.

2. Grill the Meats

Grill each meat over medium-high heat:

  • Chicken: Grill 5–6 minutes per side until fully cooked. Let rest, then slice.

  • Pork: Grill or pan-sear until browned and cooked through (about 6–7 minutes per side depending on thickness). Rest and slice.

 

 

 

3. Assemble the Baleadas

Warm tortillas on a skillet if needed. Spread a generous spoonful of refried beans onto one half of each tortilla. Add crema and sprinkle with cheese. Top with grilled meats—either individually or combined for a “baleada mixta.” Add optional toppings like avocado slices or pickled onions.

4. Fold and Serve

Fold the tortilla over the filling like a taco. Serve hot with extra crema or hot sauce on the side.
