Chef Ed Recipe – Mexican-Style Beef & Cheese Tortilla Wraps

  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup tomato paste
  • 1/2 cup beef broth or water
  • 1/2 cup red wine
  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup chopped fresh tomatoes
  • 1 avocado, sliced, 1 cup cream for topping (optional)
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded lettuce

Instructions:

  1.     Heat olive oil in a skillet over medium heat. Add diced onion and sauté until soft (about 3 minutes). Stir in garlic and cook 1 minute more.
  2. Add Ground Beef:
    Add beef to the skillet. Cook until browned, breaking it up with a spatula. Drain excess fat.
  3. Season the Meat:
    Add chili powder, cumin, paprika, salt, and pepper. Stir in tomato paste, red wine and beef broth. Simmer for 5–7 minutes until thickened and flavorful.
  4. Warm the Tortillas:
    Heat tortillas in a dry pan or microwave until soft and flexible.
  5. Assemble the Wraps:
    Spoon beef onto the center of each tortilla. Top with cheddar cheese, chopped tomatoes, avocado slices, sour cream, lettuce, and cilantro.
  6. Fold and Serve:
    Fold the bottom of the tortilla up, then roll the sides inward to form a burrito-style wrap. Serve with lime wedges.
