Chef Ed Recipe – Mexican-Style Beef & Cheese Tortilla Wraps
Savory ground beef, melty cheddar, and fresh toppings wrapped in a warm flour tortilla—simple, bold, and satisfying.

Ingredients:
- 1 lb ground beef (80/20 preferred for flavor)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup tomato paste
- 1/2 cup beef broth or water
- 1/2 cup red wine
- 4 large flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1 cup chopped fresh tomatoes
- 1 avocado, sliced, 1 cup cream for topping (optional)
- 1/4 cup chopped cilantro
- 1/2 cup shredded lettuce
Instructions:
- Cook the Beef:
Heat olive oil in a skillet over medium heat. Add diced onion and sauté until soft (about 3 minutes). Stir in garlic and cook 1 minute more. - Add Ground Beef:
Add beef to the skillet. Cook until browned, breaking it up with a spatula. Drain excess fat. - Season the Meat:
Add chili powder, cumin, paprika, salt, and pepper. Stir in tomato paste, red wine and beef broth. Simmer for 5–7 minutes until thickened and flavorful. - Warm the Tortillas:
Heat tortillas in a dry pan or microwave until soft and flexible. - Assemble the Wraps:
Spoon beef onto the center of each tortilla. Top with cheddar cheese, chopped tomatoes, avocado slices, sour cream, lettuce, and cilantro. - Fold and Serve:
Fold the bottom of the tortilla up, then roll the sides inward to form a burrito-style wrap. Serve with lime wedges.

- Add pickled jalapeños or chipotle sauce for heat.
- Swap sour cream with Greek yogurt for a lighter option.
- Throw these on a panini press for a crispy exterior.
