Ingredients

For the Burgers:

  • 2 lbs ground beef (80/20 blend)
  • Salt and black pepper to taste
  • 8 slices thick-cut bacon
  • 4 brioche or sesame buns, toasted
  • 1/2 cup crumbled blue cheese
  • Lettuce leaves
  • Tomato slices
  • Red onion rings (optional)
  • Mayo or garlic aioli (optional)

For the Fries:

  • 4 large russet potatoes, cut into thick fries

  • 2 tbsp olive oil
  • Salt, pepper, paprika

For the Cole Slaw:

  • 1/2 head green cabbage, finely shredded
  • 1 carrot, grated
  • 1/4 cup mayo
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

1. Make the Fries:

Preheat oven to 425°F (218°C). Toss cut fries in olive oil, salt, pepper, and paprika. Bake for 25–30 minutes, flipping halfway through for golden crisp edges.

2. Cook the Bacon:

In a skillet or oven, cook bacon until crispy. Drain on paper towels.

3. Form and Grill the Burgers:

Divide ground beef into 4 thick patties. Season both sides generously with salt and pepper. Grill or sear over medium-high heat for about 4 minutes per side for medium. In last minute of cooking, top each patty with blue cheese to melt slightly.

4. Build the Burger:

Toast buns. 5. Make the Slaw:

Toss cabbage and carrot in a large bowl. In a smaller bowl, whisk mayo, vinegar, sugar, salt, and pepper. Combine and chill before serving.
