Ingredients:

For the Chicken Skewers:

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch chunks
  • 1 red bell pepper, cut into chunks
  • 1 red onion, quartered and layers separated
  • 1 zucchini, sliced thick
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers

For the Red Sauce:

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 small red onion, finely chopped
  • 1 (15 oz) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon red pepper flakes (optional for heat)
  • 1/2 teaspoon sugar
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions:

1. Marinate the Chicken:
In a large bowl, mix olive oil, garlic powder, smoked paprika, oregano, salt, and pepper. Add the chicken pieces and toss to coat evenly. Cover and marinate in the refrigerator for at least 2 hours.

2. Prepare the Skewers:
Thread the marinated chicken, red bell peppers, onion, and zucchini onto the skewers, alternating for color and texture.

3. Make the Red Sauce:
In a saucepan, heat olive oil over medium heat. Sauté garlic and onion until soft and fragrant (about 3–4 minutes). Stir in crushed tomatoes and tomato paste. Add red pepper flakes, sugar, balsamic vinegar, salt, and pepper. Simmer for 10–15 minutes until thickened. Adjust seasoning to taste. Keep warm.

4. Grill the Skewers:
Preheat grill to medium-high heat. Grill the skewers for 10–15 minutes, turning occasionally until chicken is fully cooked and slightly charred.

5. Serve:
Plate the skewers and generously spoon the warm red sauce over the top. Garnish with fresh chopped basil or parsley. Serve with rice, grilled flatbread, or couscous.
