Chef Ed Recipe – Guatemalan Churrasco

Ingredients:
- 2 lbs flank steak or skirt steak
- 1/4 cup Worcestershire sauce
- 1/4 cup fresh orange juice
- 2 tablespoons lime juice
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Chirmol (Tomato Salsa):
- 4 ripe roma tomatoes
- 1/4 white onion, finely chopped
- 1 garlic clove, minced
- 1 tablespoon chopped cilantro
- Juice of 1 lime
- Salt to taste
For Serving:
- Grilled scallions (cebollines)
- Steamed white rice
- Black beans (whole or refried)
- Corn tortillas (handmade or store-bought)
- Avocado slices or guacamole
Instructions:
1. Marinate the Steak:
In a bowl, mix Worcestershire, orange and lime juice, minced garlic, olive oil, soy sauce, oregano, salt, and pepper. Place steak in a resealable bag or shallow dish and pour marinade over. Cover and refrigerate for at least 2 hours or up to 4 for rich flavor.
2. Make the Chirmol:
Grill or roast the tomatoes until slightly charred and soft. Let cool, then peel and mash them in a bowl. Stir in chopped onion, garlic, cilantro, lime juice, and salt. Chill until ready to serve.
3. Grill the Steak and Scallions:
Preheat grill to high heat. Remove steak from marinade and grill 5–7 minutes per side for medium, or until desired doneness. Grill scallions beside the meat until slightly charred. Let steak rest 5 minutes, then slice against the grain.
4. Build the Plate:
Place sliced steak with grilled scallions. Add white rice, beans, chirmol, avocado, and warm tortillas on the side.
