Chef Ed Recipe – Gooey, Warm Chocolate Chip Cookies

Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp pure vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups semi-sweet chocolate chips (use high-quality chips for best gooey texture)
- Optional: flaky sea salt for sprinkling on top
Instructions:
Step 1: Prep the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Cream the Butter and Sugars
In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy—about 2–3 minutes.
Step 3: Add Wet Ingredients
Crack in the eggs, one at a time, and mix well. Add the vanilla extract and beat until smooth.
Step 4: Mix Dry Ingredients Separately
In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined—do not overmix.
Step 5: Fold in Chocolate Chips
Gently fold in the chocolate chips with a spatula or wooden spoon, making sure they’re evenly distributed.
Step 6: Scoop and Shape
Using an ice cream scoop or large spoon, scoop dough balls (about 2 tablespoons each) onto your prepared baking sheet, leaving about 2 inches of space between them.
Step 7: Bake to Gooey Perfection
Bake for 9–11 minutes, or until the edges are golden but the centers are still soft and slightly underbaked. This is the secret to that warm, gooey center.
Step 8: Rest and Serve
Let cookies rest on the baking sheet for 3 minutes before transferring to a wire rack. Serve warm and gooey—best enjoyed straight from the oven with a cold glass of milk!
