1. Prepare the Batter:
In a large mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Make sure it’s smooth and well combined.

2. Dip the Bread:
Preheat a skillet or griddle over medium heat. Melt a bit of butter to coat the surface. Dip each slice of bread into the egg mixture for about 5–10 seconds per side, ensuring it’s soaked but not falling apart.

3. Cook the French Toast:
Place the soaked bread slices onto the hot skillet. Cook for 3–4 minutes on each side or until golden brown and slightly crispy on the edges.french toast, Chef Ed, brunch recipe, breakfast, maple syrup, fresh fruit, healthy breakfast, weekend brunch, brioche toast, egg batter, cinnamon toast, banana, blueberries, strawberries, powdered sugar, easy breakfast, fancy breakfast, sweet brunch, gourmet toast, whipped cream, fruit toppings, homemade french toast, skillet recipes, quick breakfast, Sunday brunch, brunch classics, vanilla toast, comfort food, brunch ideas, sweet tooth breakfast, balanced breakfast Add more butter as needed between batches.

4. Prepare the Fruit:
While the toast is cooking, rinse and slice your fresh fruit. For extra flavor, toss the berries in a tiny bit of maple syrup or lemon juice.

5. Assemble and Serve:
Arrange two slices of French toast per plate. Top generously with the mixed fruit, drizzle warm maple syrup over everything, and dust with powdered sugar if desired. Add a dollop of whipped cream for a rich finish.

Chef Ed’s Tips:

  • Day-old bread holds up best—slightly stale brioche is ideal for soaking.

  • Make it healthier by using whole grain bread and low-fat milk, and skip the whipped cream.
  • Add protein by including Greek yogurt on the side or topping with toasted almonds or sunflower seeds.

Health Benefits:

This dish combines indulgence with freshness. The eggs and milk provide protein and calcium, while the fruit adds antioxidants, vitamins, and fiber. Use pure maple syrup in moderation to avoid refined sugars, and opt for whole grain bread to increase fiber content.
