Avocado and Eggs are the bomb
Ingredients: 2 ripe avocados, sliced
4 hard-boiled eggs, halved
1 cup cherry tomatoes, halved
1 cucumber, sliced
1 cup mixed greens (lettuce, spinach, arugula)
1/4 red onion, thinly sliced
1/2 cup corn kernels (fresh or canned)
Juice of 1 lemon
2 tablespoons honey
Salt and pepper to taste
Fresh parsley or cilantro for garnish
Instructions:
Prepare the Ingredients:
Slice the avocados and hard-boiled eggs.
Halve the cherry tomatoes.
Slice the cucumber and red onion.
Assemble the Salad:
Arrange the mixed greens on a large serving platter or individual plates.
Top with sliced avocado, hard-boiled eggs, cherry tomatoes, cucumber, red onion, and corn kernels.
Make the Dressing:
In a small bowl, whisk together the lemon juice, honey, salt, and pepper until well combined.
Toss and Serve:
Drizzle the dressing over the assembled salad.
Gently toss to coat the ingredients evenly with the dressing.
Garnish with fresh parsley or cilantro.
