  • 2 tbsp fresh parsley, chopped
  • 1 cup shredded mozzarella cheese
  • 12 large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Optional: red pepper flakes for heat, lemon wedges for serving

Instructions

Step 1: Prepare the Shrimp
In a bowl, toss shrimp with olive oil, paprika, salt, and pepper. Preheat a grill or stovetop grill pan over medium-high heat. Grill shrimp for 2–3 minutes per side until pink and slightly charred. Set aside.

Step 2: Make the Garlic Butter
In a small bowl, mix softened butter, minced garlic, and parsley. Spread evenly over the cut sides of the bread.

Step 3: Assemble the Bread
Preheat your oven to 375°F (190°C). Place the buttered bread halves on a baking sheet. Top each half with a generous sprinkle of mozzarella cheese. Arrange the grilled shrimp over the top—6 shrimp per half for even coverage.

Step 4: Bake and Broil
Bake the bread for 10 minutes until the cheese melts. For a bubbly, golden finish, broil on high for 1–2 minutes, watching carefully to avoid burning.

Step 5: Serve Hot
Slice into pieces and serve warm. Garnish with extra parsley or a squeeze of lemon juice for brightness.

Chef Ed’s Tips:

  • Use fresh garlic, not powder, for maximum flavor.
  • Pre-cooked shrimp can be used in a pinch—just warm before topping.
  • Add sliced cherry tomatoes or a drizzle of balsamic glaze for a gourmet twist.
