Directions:
1. Make the Hollandaise Sauce:
In a heatproof bowl over simmering water (double boiler method), whisk egg yolks and lemon juice until thickened and doubled in volume. Slowly drizzle in melted butter, whisking constantly until smooth and creamy. Add cayenne and salt to taste. Keep warm.
2. Poach the Eggs:
Bring a saucepan of water to a gentle simmer. Add vinegar. Crack each egg into a small cup, then gently slide into the water. Poach for 3–4 minutes until whites are set and yolks are runny. Remove with slotted spoon and drain on paper towel.
3. Toast the Muffins:
Split and toast the English muffins until golden and crisp.
4. Assemble the Dish:
Place tomato slices on each muffin half. Layer smoked salmon, followed by a poached egg. Spoon warm hollandaise sauce generously over the top. Sprinkle capers and garnish with dill or chives.
