Chef Ed’s Recipe – BBQ Beef Ribs
Fall-off-the-bone, smoky-sweet ribs slathered in bold, sticky barbecue sauce

🥩 Ingredients:

For the Ribs:

  • 3–4 pounds beef back ribs or short ribs
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder

  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper (optional, for heat)

For the BBQ Sauce (or use your favorite bottled sauce):

  • 1 cup ketchup
  • ¼ cup apple cider vinegar
  • ¼ cup brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

🔥 Instructions:

1. Prep the Ribs:

Remove the silver skin membrane from the back of the ribs for tenderness.
Rub the ribs all over with olive oil.
In a small bowl, mix all dry rub spices and apply generously to both sides of the ribs. Let sit at room temperature for 30 minutes or refrigerate overnight for deeper flavor.

2. Slow Roast (Oven or Grill):

Place ribs on a baking tray lined with foil or on indirect heat on the grill. Cover with foil and roast for 2½ to 3 hours until tender.

3. Make the BBQ Sauce:

While ribs cook, combine all sauce ingredients in a saucepan. Simmer over low heat for 15 minutes, stirring occasionally until thickened. Adjust seasoning as needed.

4. Finish on High Heat:

Once ribs are tender, remove foil. Brush BBQ sauce generously on both sides.
Increase oven heat to 450°F (or place over direct heat on grill) and cook for 10–15 minutes until sauce caramelizes and edges crisp up.


🍽️ Serving Suggestion:

Serve hot with extra sauce on the side, and classic sides like coleslaw, cornbread, baked beans, or potato salad.


👨‍🍳 Chef Ed’s Tip:

For that real BBQ flavor, smoke the ribs over hickory or mesquite wood for 3 hours instead of oven roasting. Keep heat low and indirect.
