Chef Ed’s Herb-Crusted Roasted Pork

Ingredients
- 3–4 lb boneless pork shoulder or pork loin
- 2 tbsp olive oil
- 6 cloves garlic, minced
- 2 tbsp fresh rosemary, finely chopped (or 1 tbsp dried)
- 1 tbsp thyme (fresh or dried)
- 1 tbsp paprika
- 1 tbsp Dijon mustard
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp onion powder
- 1/2 tsp crushed red pepper (optional)
- 1/2 cup chicken broth or white wine (for roasting pan)
Instructions
1. Prep the Pork:
Pat pork dry with paper towels. In a small bowl, mix olive oil, garlic, herbs, mustard, and spices into a paste. Rub generously all over the pork.
2. Let It Rest (Optional but Recommended):
Wrap seasoned pork and refrigerate 2–12 hours to let the flavor soak in.
3. Roast the Pork:
Preheat oven to 325°F (163°C). Place pork on a rack in a roasting pan. Add broth or wine to the bottom of the pan. Roast uncovered for 1.5–2 hours (20 minutes per pound) until internal temp reaches 145°F (63°C) for medium or 160°F (71°C) for well done.
4. Rest and Slice:
Remove from oven, cover loosely with foil, and let rest 15–20 minutes before slicing.
