  • 1 tbsp paprika
  • 1 tbsp Dijon mustard
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1/2 tsp crushed red pepper (optional)
  • 1/2 cup chicken broth or white wine (for roasting pan)

Instructions

1. Prep the Pork:

Pat pork dry with paper towels. In a small bowl, mix olive oil, garlic, herbs, mustard, and spices into a paste. Rub generously all over the pork.

2. Let It Rest (Optional but Recommended):

Wrap seasoned pork and refrigerate 2–12 hours to let the flavor soak in.

3. Roast the Pork:

Preheat oven to 325°F (163°C). Place pork on a rack in a roasting pan. Add broth or wine to the bottom of the pan. Roast uncovered for 1.5–2 hours (20 minutes per pound) until internal temp reaches 145°F (63°C) for medium or 160°F (71°C) for well done.

4. Rest and Slice:

Remove from oven, cover loosely with foil, and let rest 15–20 minutes before slicing.

Chef Ed Tip:
Don’t skip the resting period — it’s the secret to juicy pork. You can also finish under the broiler for 3–4 minutes to crisp the crust.

Serving Ideas:
Pair with roasted potatoes, sautéed greens, applesauce, or serve on a sandwich with slaw and pickles.
